History & Origin

Pork Cassoulet is a quintessential French dish that has its origins in the southwestern region of France. This hearty stew is a celebration of rustic cooking and is deeply rooted in the culinary traditions of towns like Castelnaudary, Carcassonne, and Toulouse. The dish's name is derived from 'cassole', a traditional earthenware pot used for cooking the stew.

Historically, cassoulet was a peasant dish, designed to be filling and nourishing, using whatever ingredients were available. As time passed, it evolved into a beloved staple of French cuisine, often associated with community gatherings and festive occasions. Each region has its own variation of cassoulet, but the essential elements remain the same: slow-cooked meat, beans, and rich seasonings.

Recipe & Ingredients

To prepare a delightful Pork Cassoulet, gather the following ingredients:

  • 4 tbsp goose fat
  • 350g pork, diced
  • 1 large onion, chopped
  • 10 garlic cloves, whole
  • 1 thinly sliced carrot
  • 1 tsp fennel seeds
  • 2 tbsp red wine vinegar
  • 600ml vegetable stock
  • 1 tbsp tomato purée
  • 2 sticks of rosemary
  • Handful of parsley, chopped
  • 400g haricot beans, drained and rinsed
  • 2 tbsp breadcrumbs
  • Drizzle of oil
  • Bread, to serve
  • Broccoli, to serve

Follow these steps to create your Pork Cassoulet:

  1. Preheat your oven to 140°C (120°C fan/gas 1).
  2. In a large ovenproof pan, heat the goose fat over high heat. Add the diced pork and sear for a few minutes until browned on the edges.
  3. Reduce the heat to low, then add the chopped onion, whole garlic cloves, sliced carrot, and fennel seeds. Cook gently to soften the vegetables for a few minutes.
  4. Pour in the red wine vinegar, scraping any bits from the bottom of the pan. Add the vegetable stock, tomato purée, and half of the rosemary and parsley. Bring to a boil, then simmer for 10 minutes.
  5. Season the mixture, cover with a lid, and transfer the pan to the oven for 2 hours. Remove the lid for the final hour of cooking, stirring occasionally and adding the beans with 30 minutes to go.
  6. Once cooked, remove from the oven and heat the grill. Sprinkle the top with the remaining herbs and breadcrumbs, drizzle a little oil, and return to the oven for 5-10 minutes until the breadcrumbs are golden.
  7. Serve with crusty bread and green vegetables like broccoli.

Indulging in Pork Cassoulet is not just about savoring a meal; it’s about experiencing a piece of French history and tradition. This stew exemplifies comfort food at its best, providing warmth and satisfaction with every bite.
